Waldorf Chicken Salad Updated
Doron SchlairShane Kelly takes favorite comfort food dishes and makes them more wholesome, as in her Waldorf Chicken Salad recipe.
The original Waldorf Salad was created more than 100 years ago by The Waldorf Hotel's maitre d'hotel, Oscar Tschirky -- a man credited with inspiring many of the hotel's signature dishes (despite the fact that he had no formal training as a chef). Though modern variations include different vegetables, poultry or dried fruit, one factor has remained constant: the salad's thick, creamy dressing. Shane Kelly puts her healthy spin on this salad by using less mayonnaise than the traditional version; and she adds flavor with seasonings such as shallots, tarragon and Dijon mustard.
