Hanger Steak Salad
Adam MacchiaIn his series Marcus' Kitchen, chef Marcus Samuelsson shares dozens of recipes that prove "American" cuisine is really a delicious melting pot that draws upon flavors from all over the world.
In this video, Marcus sears a hanger steak and serves it over crispy lettuce with a chunky, savory dressing. The steak itself gets little treatment -- just salt and pepper -- and is seared in a pan until nicely browned and rare to medium-rare with some sprigs of thyme. After the steak is done, Marcus prepares the salad's "dressing" by sautéeing shallots, thinly sliced garlic, lime zest, grated ginger and soy sauce, and then pours this warm vinaigrette over the steak and lettuce.
