How to Wash Mushrooms

Hi, I'm Chef Bruce Mattel from the Culinary Institute of America, and today I'm going to show you this kitchen basic: how to wash mushrooms.
We have here a bowl of white mushrooms, the common mushrooms found in all grocery stores. These mushrooms (unlike perhaps a shiitake mushroom) are grown in soil with a lot of fertilizer, so it's important that you do wash them. Mushrooms that are grown on wood, like a shiitake mushroom, may just require some brushing, and inspection - while these mushrooms you always want to wash.
Mushrooms are very absorbent, so my recommendation is that we don't run water on them in the sink, which would really force that water in. You don't want to have the mushrooms in prolonged contact with water, either. You want to just really try to get the excess dirt off the surface, and get them someplace where they can dry immediately. In addition, the best thing to do is to wash them just prior to use, so you don't encourage a lot of moisture retention and possible mold formation.
All you need here are the mushrooms, a bowl of clean, cool tap water, and a pan with paper towels or even a regular dishcloth. I'm going to take these mushrooms and place them in the bowl of water, give them a very gentle toss, and allow the dirt to sink to the bottom - them I'm going to take my spider, and just carefully lift them out, drain off all the excess water, place them on the pan with the paper towel, and kind of shake them around a little to dry off all the excess moisture.
If you're not going to use these immediately, you could place these in the refrigerator just like this, and allow them to air dry, and use them later on. Or if you are going to use them now, prepare them according to the recipe.
