In my continuing quest to trick my family into liking foods they say they don't like, I decided to make this recipe for Chicken Cutlets with Walnut-Caper Brown Butter.
It's the capers Chris says he doesn't like -- the result, he explained, of having a roommate once who put lots of capers in every single thing he cooked. (Other foods Chris says he doesn't like: cilantro, squash, sweet potatoes, tomatoes, tofu, hummus, smoked salmon, cream cheese, sour cream, yogurt... Someone get me a recipe that has all these ingredients!) My daughter Michaela is neutral tending toward negative on capers. This recipe pushed her slightly more to the positive side -- but my husband, not so much. Personally, I loved it.
I hid the recipe while I was cooking so he couldn't tell what was in it. I chopped the capers up finely so he couldn't see them in the sauce. I followed the recipe exactly -- I even bought parsley, which both Chris and Michaela say they don't like. How can you not like parsley? Gah.
The house smelled divine while I was cooking-they both commented on it. Auspicious, I thought. And it was a total snap to prepare -- the only thing I did differently was to salt and pepper the chicken cutlets on the opened packages rather than on a cookie sheet (I hate washing cookie sheets).
Then came the moment of truth.
"There's something in here that I don't like," Chris said. Then, a minute later, "Is it capers?"
I admitted that yes, it was the dread capers. Here's where I need a decoder ring, though. I asked him if that meant he didn't like it, and he told me that he liked it fine, he just didn't like the capers. I don't even know what that means.
Meanwhile, Michaela and I devoured our portions and split the remaining cutlet. I spooned the last of the brown butter sauce out of the pan, and ran my finger around the (now cool) skillet to get every last bit. We could have eaten several more cutlets, I'm sure.
Michaela's only comment? "Is there any more?"
