Fun With Liquid Nitrogen: Richard Blais Makes Cap'n Crunch Milkshakes

Richard Blais, winner of Top Chef All-Stars and concept chef of Flip Burger Boutiques in Atlanta and Birmingham, is home to some crazy liquid nitrogen shenanigans. If you've seen Richard on Top Chef, you know how much he loves the stuff. Recently, Richard stopped by KitchenDaily to show us one of his fantastical creations.
At his restaurants, Richard serves up milkshake flavors like Nutella and burnt marshmallow, mango ginger, Krispy Kreme, pistachio and white truffle, strawberry shortcake, and Cap'n Crunch -- which he happened to demo for us.
First, Richard infuses milk with the sugary cereal. Then he purees it and incorporates it into a basic ice cream custard recipe, and he promptly freezes it in a stand mixer with a dose of liquid nitrogen. In just a few seconds, an amazing shake is born.
