AlamyWhen March 17th rolls around, you'll want to have St. Patrick's Day recipes at the ready. Below are traditional dishes that came over to the U.S. along with the Irish immigrants -- corned beef and cabbage, potatoes, soda bread, and stout (we've incorporated the latter into a dessert) -- and each has a place in the culinary memories of Irish people everywhere.

St. Patrick's Day marks the anniversary of the death of (you guessed it) St. Patrick in the 5th century, and the Irish have observed it as a religious holiday for over a thousand years. St. Patrick's Day falls during Lent, but the dietary prohibitions are suspended for the day -- Irish families would traditionally attend church in the morning and celebrate in the afternoon with dance, drink and food.

You provide the music, dance, and drink; we've got you covered on the food...

 St. Patrick's Day Recipes

Corned Beef and Cabbage: It might take a few hours to cook, but this classic braise requires very little effort to throw together and feeds a small army of leprechauns. It's also incredibly delicious and just keeps getter better as leftovers.

Irish Soda Bread: This version of the classic Irish soda bread is delicately sweetened with raisins and has an intriguing nuttiness from caraway. It's also quick to make (thanks to the leavening power of the soda) and a delicious way to sop up corned beef juices.

Chocolate Guiness Cake with Irish Cream Caramel Sauce: This deep and dark ode to Ireland is quite possibly the second best use of Guinness in the world, next, only, to drinking the black liquid gold beer.

Fun Fact: Parades are practically synonymous with St. Patrick's Day. Ironically, the History Channel says the first St. Patrick's Day parade took place not in Ireland but in the United States. Irish soldiers serving in the English military marched through New York City on March 17, 1762. Along with their music, the parade helped the soldiers reconnect with their Irish roots, as well as fellow Irishmen serving in the English army.
But, if you cook every night anyway, it can be a little more difficult to make a meal into a special event. One year I tried to experiment with fancy and weird recipes, and my wife got so mad at me for screwing up dinner that she threw a bunch of thyme at me (we made up, but still, point taken). From then on, I've stuck to the proven classics. This menu is an easy way to impress, and bring a little romance to the table.
Then there's the "sure hope they don't notice the bacon in the green beans or sausage in the stuffing" approach. But we think vegetarians deserve a feast to vie with the traditional turkey-centric Thansgiving so we designed this robust meat-free menu with a satisfying main course, succulent sides and a gooey chocolaty dessert.
Wine Pairings: A Zinfandel such as the 2006 Z-52 Zinfandel (Lodi, California) will bring out the earthy flavors in the pot pie. To really intensify the pot pie's flavors, try a very bold red such as The Big Red Monster (California).

Nutella-Hazelnut Bread Pudding

For those who haven't tried it, Nutella is a rich, creamy chocolate-hazelnut spread. Here, we've made the most of its smooth and velvety texture to create a decadent bread pudding. Your Thanksgiving guests will swoon when they taste how the gooey chocolate custard transforms hearty chunks of bread.

Wine Pairing: Sandeman Ruby Port (Portugal) has plum, berry and chocolate notes that will complement the hazelnut and chocolate in the bread pudding. For something dryer, try Ravenswood Winery Vintners Blend Petite Sirah (California), which has just enough cherry bite on the finish to compete with the hazelnut and Nutella.

Beer Pairing: To balance the bread pudding, go with a like-minded brew such as Rogue's Hazelnut Brown Nectar. It's a nutty brown ale with notes of toffee and chocolate, and a creamy, easy drinkability that'll agree with everyone. If you can find it, Short's S'Mores Stouit is a fun, conversation-starting pairing.

And while we all love turkey sandwiches, it would be nice to have a few other options.

We've got 8 recipes that make full meals out of the leftovers. Each one introduces completely new flavors -- they're not just a rehashing (and reheating) of the original dish. In other words, these aren't your usual Thanksgiving leftover recipes. We used our Traditional Thanksgiving and Vegetarian Thanksgiving as the spring board (each of these recipes uses up leftovers from those menus), but these are doable no matter what you served.
