As Irish soda bread evolved in the United States, it became a more decadent concoction, often containing plenty of eggs, sugar and butter, plus raisins or currants and caraway seeds. But what <em>does </em>tie this newfangled soda bread to the traditional Irish version is that it remains a "quick" bread: Thanks, again, to the baking soda, there's no need to wait while the bread rises -- just mix, knead very briefly and bake. Below are some great variations on Irish soda bread -- perfect for St. Patrick's Day.<br />

So we decided that instead of holding a taste test with editors, we'd go to the<em> real </em>experts when it comes to that loved or loathed dried fruit and nut concoction: We ordered two sets of 11 different mail-order fruitcakes -- from amazon.com, Williams-Sonoma and direct from several monasteries and other sources -- and held a mom taste-off to determine who makes best fruitcake available in the United States. <br />

The Louisiana-based tasters noted that this winning cake, made by Trappist monks in Kentucky, was not as attractive in appearance as the other cakes tasted, but was "very moist and tasty with good fruit" throughout. My mother remarked that the cake had a strong nostalgic appeal "for those of us who grew up with homemade bourbon soaked fruitcake." The Massachusetts-based testers -- for whom this cake was the second from the top -- agreed that this cake had a "heavy alcohol taste," and also found this booziness "very appealing." They agreed on the cake's superior moistness and also liked the "nice green tin."</div>

"The fruit pieces are big enough to get a good taste of each, even the citron," remarked one tester. The testers also praised the elegance and attractiveness of the cake, as well as the tin.</div>

This cake represented <em>the </em>classic fruitcake for both teams of testers. "This is what I expect a fruitcake to look and taste like," said one member of the Massachusetts team. And my mom noted that it's been "our household's traditional fruitcake for over 30 years." The Louisiana team praised the cake's "nice appearance," "excellent texture" and balance of fruity and nutty flavors with "fruits and nuts evenly distributed throughout."</div>

Tasters found this marzipan-topped cake hard to judge since it was "so different from the other fruitcakes in every way." One tester likened it to "figgy pudding," while another called it "the fruitcake for people who don't like fruitcake." Others found the cake and topping dryer than expected. The teams did agree on one thing, though: the cake is quite attractive.</div>

When I attended my first potluck Thanksgiving away from my family, I brought a number of meticulously crafted from-scratch dishes -- none of which I can remember now -- and a classic green bean casserole. For me, it wasn't Thanksgiving without that combo of canned green beans, canned soup and canned (of course) French fried onions. I think part of the reason I remember bringing the green bean casserole is that I got strong reactions from the other potluck guests -- excitement from those in my isn't-Turkey-Day-without-it camp and wrinkled noses from those 20-something gourmets who favored freshly steamed green beans with toasted almonds, sea salt and a squirt of lemon juice. Mrs. Obama talked about her <em>Let's Move</em> initiative to combat childhood obesity and took live questions from the audience.<br />
<br />
During the broadcast, the First Lady discussed how she and President Obama have made simple changes in their own household to encourage healthy eating, including eliminating snacks, encouraging drinking more water instead of filling up on sugary drinks, and serving more fruits and vegetables. They went through their cabinets and removed processed foods and began sitting down more for dinner as a family. Mrs. Obama says that she started out by making sure to cook one good meal a week -- she acknowledged that cooking every night isn't a realistic option for many busy parents. <br />
<br />
Mrs. Obama stressed the importance of small, doable changes. "It's not about saying 'no' forever to ice cream and French fries," she said. "These are special treats." And she underlined the importance of leading by example: "Kids watch everything we do," she says, noting that her girls certainly check to see if she's eating <em>her</em> vegetables. Another tip from the First Lady: Get kids involved in cooking.
