Cheddar, Ham, and Scallion Cups

+ VOTE NOWIt's festive to have your own individual strata, but if you prefer, you can also make this cheesy egg dish in a 9 1/2-inch deep-dish pie plate or 6-cup casserole. Just mix it up the night before and pop it in the oven while everyone is opening gifts
Ingredients
Directions
Beat eggs with milk and pepper until combined in a medium bowl. Stir in remaining ingredients. Cover and let sit overnight, chilled.
Preheat oven to 350F with rack in middle of oven.
Butter a 6-cup standard muffin tin, preferably nonstick. Divide mixture among cups and bake until puffed and lightly golden, about 35 minutes. Cool 5 minutes and serve.`

Quick version is to put the bread into the blender and make into crumbs, then the "soaking" is not required, or can be done in a few minutes.

You can heat in the microwave or eat it a room temperature...wrap in a paper towel for the commute in the car! Great for dinner too. Use whatever meat or vegetable ingredients you want! Marie

Vegetarian-spinach,mushrooms,no ham. Measure 1cup chopped spinach,mushrooms. Also doubled recipe-put in tiny mini muffin cups

I loved how easy and quick it was and everyone loved the flavor. I think buying chipped ham may be even quicker and still be delicious. Will make again...for sure!
