Cheddar, Ham, and Scallion Cups

It's festive to have your own individual strata, but if you prefer, you can also make this cheesy egg dish in a 9 1/2-inch deep-dish pie plate or 6-cup casserole. Just mix it up the night before and pop it in the oven while everyone is opening gifts

Ingredients

Serves:

    • 3 large eggs
    • 1 1/2 cups whole milk
    • 1/4 teaspoon black pepper
    • 3 (4- by 1/2-inch-thick) slices Italian bread, torn into pieces (2 cups packed)
    • 5 ounce piece cooked ham, coarsely chopped (scant cup)
    • 3 ounce piece sharp Cheddar, coarsely grated (1 cup)
    • 2 scallions, finely chopped

Directions

Beat eggs with milk and pepper until combined in a medium bowl. Stir in remaining ingredients. Cover and let sit overnight, chilled.

Preheat oven to 350F with rack in middle of oven.

Butter a 6-cup standard muffin tin, preferably nonstick. Divide mixture among cups and bake until puffed and lightly golden, about 35 minutes. Cool 5 minutes and serve.`

Quick version is to put the bread into the blender and make into crumbs, then the "soaking" is not required, or can be done in a few minutes.

I make these frequently & either take them to work for meetings, lunch with a group, or make a batch and freeze in plastic baggies..I call it breakfast to go...in a cup! You can heat in the microwave or eat it a room temperature...wrap in a paper towel for the commute in the car! Great for dinner too. Use whatever meat or vegetable ingredients you want! Marie

Mini muffin cups make tiny quiche like muffins. Hint--lightly butter muffin cups or if you use non-stick spray, spray a cloth or paper towel first and rub. Otherwise, muffins are soggy and have to cool on a towel first.

GREAT recipe! Husband helped-fun,easy to make together. Used regular onion(not scallions). Also added chopped mushrooms! Vegetarian-spinach,mushrooms,no ham. Measure 1cup chopped spinach,mushrooms. Also doubled recipe-put in tiny mini muffin cups

Made this for a Christmas brunch, doubled for twelve people. It was a HIT! I loved how easy and quick it was and everyone loved the flavor. I think buying chipped ham may be even quicker and still be delicious. Will make again...for sure!

I made this for Christmas morning and substituted gluten free bread for the Italian (no Italians in my family :)!). It was wonderful! Planning to have it this weekend when we all get together again for New Years!
