Rice Salad with Green Olives and Sweet Peppers

There are many ingredients that are frequently used in a Mediterranean–style rice salad, but olives are almost always present, as they add extra flavor and color.

Ingredients

Serves:

    • 3 cups cooked long or medium grain rice, at room temperature
    • 1 cup green olives, pitted if needed, and coarsely chopped
    • 1/2 of a red onion, minced
    • 1/4 cup chopped flat leaf parsley
    • 1 sweet red pepper, finely chopped
    • 1 ripe tomato, chopped
    • 3 tablespoons extra-virgin olive oil
    • 2 tablespoons red wine vinegar
    • 1/2 teaspoon kosher or sea salt
    • 1/4 teaspoon freshly ground black pepper

Directions

In a large bowl, combine the rice, olives, onion, parsley, sweet red pepper, and tomato and gently toss. Add the olive oil, vinegar, salt and pepper and toss again. Taste and adjust salt if needed. Serve at room temperature

I used basmati rice and added some lemon peppered chicken breast.. absolutely DELISH!

ladydyfromri, I think those are pieces of olives, not corn.

My aunt in Italy makes this salad..she uses these ingredients along with gardinera (the carrots,peppers,cauliflower in a jar that's in brine) chopped finely along with tuna ..you can put anything in it and as much as you like. That's what I do, sometimes I dice cucumber and artichoke hearts..all yum!

I see corn in the picture but not in the recipe. If corn is an ingredient, how much should be added? Thanks....
